Whole Grain Chocolate Bar - No oil, No sugar, No nuts, No dairy, No flour

I have them like once or twice a week. I take my big bowl of salad or any vegetable steamed before eating them to fulfill the 50/50 rule.

They are very easy to make. You can teach your child to make them and you just stick them in the oven. The chocolate cream dressing on the base is optional. I did that here to get a finer picture… lol. I usually just eat the base without any chocolate cream.

Let’s get started…

THE BASE OF THE WHOLE GRAIN CHOCOLATE BAR
Ingredients
Method
  • Mash the bananas with a fork or potato masher.
  • Add the applesauce and mix together.
  • Add in the oats, quinoa, cocoa powder.
  • Mix all together and put in your baking pan.
  • It would be quite firm and can be molded into a square shape.
  • Place in the oven for 30mins.
THE CHOCOLATE CREAM:
Ingredients
Method
Assembly

Place the base on a plate and pour the chocolate cream on it. Smooth with a spoon.

NOTES

I usually find 4 bananas too sweet, so 1 use 2. But for my husband and kids, I use 4. Reducing the number of bananas make it denser and chewier, but I like it that way. If you don’t have quinoa, you can use any grain of your choice. Millet, buckwheat, barley, boiled brown rice, or make it only from oats. So, that’ll be a cup and a quarter of rolled oats.

If you don’t have a nutribullet blender and you are finding it difficult to blend the cream, you can double the recipe and keep the rest for later use. Sometimes, I pour in an ice cube tray and freeze. The girls love eating it that way. Chocolate ice cubes… lol. I use the opportunity to sneak in some chia seeds into them by blending like a teaspoon or two with the mixture before freezing. If you add chia seeds, then you’ll have to freeze immediately so it doesn’t turn into a pudding.

As I said, you can completely skip the chocolate cream and eat the base just by itself. However, making the recipe for this post in order to have a picture, I realized having the cream on it is a game-changer. I ate the whole thing… lol. I probably would be putting the chocolate cream every time now *smiles.

VERY IMPORTANT TO NOTE is that I didn’t use oat flour or grind the quinoa into flour. I used them whole!

Applesauce

Just before I wrap up this post, I thought it’ll make sense to teach you how to make your own unsweetened applesauce. It’ll probably be hard to find it here in Nigeria. And even if you do find it, it would most likely have a lot of sugar, chemicals, and the likes. Plus, It’s super easy to make.

In my post on Sugar-Free Snacks: Perfect Treats For Weight Loss? , I mentioned applesauce as one of the really cool, lower-calorie alternatives to butter, oil, and margarine in your baking. Having it around will come in very handy.

What you need to make it is just apples. Learned somewhere it is nicer when you mix different kinds of apples. Cut the apples into cubes, put them in a pot with little water just enough to boil them till they are soft, usually about 10 minutes. Put them in a blender and blend till smooth. That’s it! applesauce is ready. Thinking of one day making it without boiling to see if there would be a difference. I’ll keep you posted.

A number of youtubers would include cinnamon. Cinnamon is not a spice i like that much, if you do, you can add just a teeny bit. Thinking about it, you can add cinnamon or even nutmeg to the whole grain chocolate bar base. If you are a fan of these spices, please try them out with it and share your experience in the comment section.
